Ingredients Needed For Your
Gingerbread Family:
350g/12oz plain flour (extra needed for rolling out)
1 tsp bicarbonate of soda
2 tsp ground ginger
1 tsp ground cinnamon
125g/4½ oz butter175g/6oz light soft brown sugar1 free range egg (medium/large)4 tbsp golden syrup
Optional: Icing sugar to decorate your little men when they are baked to perfection.
1 tsp bicarbonate of soda
2 tsp ground ginger
1 tsp ground cinnamon
125g/4½ oz butter175g/6oz light soft brown sugar1 free range egg (medium/large)4 tbsp golden syrup
Optional: Icing sugar to decorate your little men when they are baked to perfection.
HOW TO:
1. Sift together the flour, bicarbonate of soda, ginger and cinnamon and pour into a mixing bowl. (Can use a food processor to easy the process but I don't have one of these so am doing it the old fashioned way!) Add the butter and blend until the mix looks like breadcrumbs. Stir in the sugar.
2. Lightly beat the egg and golden syrup together, (add to the food processor) or bowl, and pulse until the mixture clumps together. Tip the dough out, knead briefly until smooth, wrap in clingfilm and leave to chill in the fridge for 15 minutes.
3. While the dough is chilling, preheat the oven to 180C/350F/Gas 4. Line two baking trays with greaseproof paper.
(We managed to do about 4-5 trays worth, doing 2 trays at a time.)
4. Roll the dough out to a 0.5cm thickness - or however you like them, on a lightly floured surface. Using the cutest of gingermen cutters, cut out the little men shapes and place them on the baking tray leaving a gap between each one.
5. Bake for 12-15 minutes, or until lightly golden brown (all depends on your oven). Leave on the tray for 10 minutes to cool before moving them onto a wire rack for cooling/eating.
6. After they've cooled you have the option of keeping them plain and eating them all in one go (we definitely didn't do that... *suspicious eyes*) or you can decorate them with icing and dress the little men with buttons and eyes!
We had such a fun Sunday afternoon making these, as we'd never made them before we were a little unsure how they would turn out but after mastering the oven temperature we made loads! They were SO delicious as well which was a result.
The perfect accompaniment to any afternoon cup of tea.
I hope you have the BEST time making your very own gingerbread man family, please don't forget to tag me in your pictures if you do. All my social media's can be found on the homepage. It was the best Sunday!
Until next time,

What more could you want in a day?
Last week my family and I had the most wonderful day of afternoon tea and cake. My mum and I had decided we wanted to host a little family day and after many idea's, afternoon tea was by far the best suggestion. We began planning and preparing. If you're like me and absolutely love afternoon tea anyway, then you're going to love what we created - and the best part? It was at home!

We had an amazing day and everyone enjoyed it so much, especially the champagne. *wink face*
You don't always have to spend a million pounds to create something beautiful that everyone can enjoy. We stuck to a budget and with a bit of love created the perfect afternoon tea. With a little TLC anything is possible.
More tea anyone?

It was a lovely Spring day, the sun was shining, the wind stopped blowing and it was the perfect baking day. We couldn't face having another moody Monday, so with the help of Mary Berry we got to work on our glorious chocolate tray. (When I say 'we' - my second mum (mother in law) and I turned our Monday into a baking day, we even made a fresh loaf! Check us out. No Monday blues here.)
I'd never made this recipe before, but I was really excited for the outcome. If you want to make your own stayed tuned..
Chocolate Tray Recipe:
You will need..
225g (8oz) dark or milk chocolate broken into squares
100g (4oz) butter
100g (4oz) caster sugar
3 large eggs
75g (3oz) self raising flour
75g (3oz) ground almonds
1 tsp baking powder
1. You will need a 23cm x 30cm (or any sized traybake tin). Preheat the oven o 180c/160cFAN/GAS 4, then line the tin with foil and grease it generously with butter.
2. Place the chocolate and butter in a heatproof bowl, set over a pan of hot water and leave until just melted. (Top Tip - Avoid stiring the chocolate until it's completely melted otherwise it goes a bit funny.) Once melted, add the sugar and stir to combine, then set aside to cool slightly.
3. Add the eggs, one at a time, to the melted chocolate mixture, beating after each addition. Fold in the flour, ground almonds and baking powder and then pour evenly into the prepared tin.
4. Bake in the oven for 25-30 minutes until the mixture is just set. Allow to cool in the tin before cutting into 20 squares.
And Voila, chocolatey goodness for all.
Don't forget to send me a pic if you make your own chocolate tray, tweet me a picture @hayleyvogel_ or instagram @haylvogel - I would LOVE to see yours!
Until next time,

January is always the time everyone tends to go on a health kick, throwing the boxes of chocolate and cakes away and replacing the cupboards with kale, almond milk and avocados. I know the story all too well, and I also know how hard it can be trying to beat those pesky cravings. This year I've tried to set my goals a little more realistic so I don't automatically set myself up for failure and have started to make little changes to my diet here and there. I downloaded the app 'My Fitness Pal' and have been eating the amount of food it set out for me each day - the 'healthier' choice often has a lot more calories in could you believe! I thought I'd share with you some easy recipes that can replace the full fat fry up with something a little bit better for you... This is the first part to a series of Breakfast, Lunch and Dinner options that I've found easy to make, nutritious but also delicious! This section is all about breakfast, the most important meal of the day.
Poached Eggs on Toast - Yes, that's right, I went to Argos and picked myself up a brand new egg poaching pan and I'm going to become the poached egg queen. The pan makes it quick and easy to whip up some poached eggs and they are a much healthier option to the classic fried egg. They taste scrumptious and you can't go wrong with a few eggs on toast to kick start your morning. I personally like the whole egg cooked through so I cook my eggs for around 10 minutes until they are solid. If you are using an egg poacher then don't forget to line your little egg dishes with a little bit of butter before you crack the egg into it so the egg doesn't end up sticking to the side of the dish after it's been cooked (something I learnt after a few attempts..)
Taaa da! There we have it, a quick and easy breakfast to make and it'll fill you up all morning. For an extra touch I like to add a slice of bacon to give me a little bit extra to eat. I absolutely love bacon so this breakfast idea is perfect.
Homemade Porridge & Fresh Fruit - I love porridge. I find it to be very filling and I like to mix it with fruit to add to the flavour. It's a great source of energy and is really easy to make.. so there's really no excuse why your breakfast can't be healthy as well as delicious.
I like to start by getting all my ingredients into one place ready to sprinkle on top of my porridge. I normally use banana and strawberries but today I have fresh raspberries and I'm going to be naughty and add a little dolop of peanut butter. Start with warming a pan on the stove while you measure out your oats, I tend to use a normal sized teacup and fill it up half way if it's just a portion for myself, I would do a full cup if it were for two people. Pour the oats into the pan, and top it up with a 1 and a half cups of water using the same teacup. Just add the water and keep stirring until the porridge comes to the boil and starts to thicken. (Keep it on the heat until it reaches the amount of thickness you like to eat your porridge, some people like it runny.) I like to add a little bit of sugar into the pan so the porridge isn't completely bland.
And there we have it. Sprinkle your toppings on top, grab yourself a spoon and get stuck in! There are so many different options you can have with your porridge so it's a great breakfast to have. Some topping options include honey, sprinkle of sugar, all fruits, yogurt, nuts and seeds. All perfect with porridge and will give you the energy to tackle the day ahead.
Fresh Fruit Smoothie - There are so many different combinations that you could use to make a delicious morning smoothie. You can pretty much use everything! This is the perfect quick option if you're wanting breakfast on the go and don't have the time to sit down and eat. You can add whichever fruit you have to hand, add juice/milk and blend it all together. I tend to use banana's, strawberries, blueberries, orange juice and sometimes a little bit of milk. You can also use oats, yogurt, coconut water, apple, spinach and melon to add a little variety to your smoothie.
These have been my go to January breakfast's so far and I'm already noticing a difference in how hungry I get. I use to be hungry 24/7 but I've made a good start in controlling my cravings and sticking to having just 3 meals a day rather than a thousand. Let me know what you think, and if you have any breakfast inspiration, I'm in need of some new idea's.
Until next time, love, H x
Hibernating inside from the horrible weather, cookie baking, hot chocolate, warm and cosy day.

I woke up this morning at my usual time on a day off at 9.30am, heard the wind and rain howling against my window outside and immediately wanted to curl back up in my duvet and hibernate for the rest of the day. As I was checking my phone whilst sipping on a cup of tea, I decided that today I would bake some cookies and turn a rubbish day into a productive yummy cookie day.
I was using the Nigella Lawson cook book (I know she has a few) so after browsing the pages I finally found the pefect chocolate chip cookie recipe, Hooray!
Here is what you will need:
150g soft unsalted butter
125g soft light brown sugar
100g caster sugar
2 teaspoons vanilla extract
1 egg, fridge cold
1 egg yolk, fridge cold
300g flour (plain)
1/2 teaspoon bicarbonate of soda
1 x packet of chocolate chips
125g soft light brown sugar
100g caster sugar
2 teaspoons vanilla extract
1 egg, fridge cold
1 egg yolk, fridge cold
300g flour (plain)
1/2 teaspoon bicarbonate of soda
1 x packet of chocolate chips
What to do:
- Preheat the oven to 170 degrees/gas mark 3. Line a baking sheet with baking parchment.
- Melt the butter and let it cool a bit. Put the brown and white sugars into a bowl, pour the slightly cooled, melted butter over them and beat together.
- Beat in the vanilla extract, the cold egg and cold egg yolk until your mixture is light and creamy.
- Slowly mix in the flour and bicarb until just blended, then fold in the chocolate chips.
- Scoop the cookie dough up using an ice cream scoop (or an American quarter cup measure) and drop onto the prepared baking sheet, plopping the cookies down about 8cm apart. You will need to make these in 2 batches, keeping the bowl of cookie dough in the fridge between batches.
- Bake for 15-17 minutes in the preheated oven, or until the edges are lightly toasted. Cool on the baking sheet for 5 minutes before transferring to wire racks.
... And here they are, daaanah!
