It was a lovely Spring day, the sun was shining, the wind stopped blowing and it was the perfect baking day. We couldn't face having another moody Monday, so with the help of Mary Berry we got to work on our glorious chocolate tray. (When I say 'we' - my second mum (mother in law) and I turned our Monday into a baking day, we even made a fresh loaf! Check us out. No Monday blues here.) 
I'd never made this recipe before, but I was really excited for the outcome. If you want to make your own stayed tuned..

Chocolate Tray Recipe:

You will need.. 
225g (8oz) dark or milk chocolate broken into squares
100g (4oz) butter
100g (4oz) caster sugar
3 large eggs
75g (3oz) self raising flour
75g (3oz) ground almonds 
1 tsp baking powder 

1. You will need a 23cm x 30cm (or any sized traybake tin). Preheat the oven o 180c/160cFAN/GAS 4, then line the tin with foil and grease it generously with butter.
2. Place the chocolate and butter in a heatproof bowl, set over a pan of hot water and leave until just melted. (Top Tip - Avoid stiring the chocolate until it's completely melted otherwise it goes a bit funny.) Once melted, add the sugar and stir to combine, then set aside to cool slightly.
3. Add the eggs, one at a time, to the melted chocolate mixture, beating after each addition. Fold in the flour, ground almonds and baking powder and then pour evenly into the prepared tin.
4. Bake in the oven for 25-30 minutes until the mixture is just set. Allow to cool in the tin before cutting into 20 squares. 

And Voila, chocolatey goodness for all.

    1. Hi Tasha, thank you so much for your comment - they are delicious! Ummm, I can't say these lasted longer than a day because everyone ate them so quick so I didn't get to test them out but I would say if they were wrapped up properly could last 2-4 days after baking! xx
